MARBLE CAKE

This is my basic chocolate marble cake.

Here is the ingredient;

  • 225g butter,softened
  • 225g caster sugar
  • 4 eggs(medium size)
  • 2 tsp vanilla extract
  • 225g plain flour
  • 2 tsp baking powder
  • 50ml milk
  • 50g cocoa powder,sifted

METHOD
  1. Preheat the oven to 180'c.Grease the baking tin with butter.
  2. Cream the butter in a large bowl until soft.Add in the sugar and beat until the mixture is light and fluffy.
  3. Whisk the eggs and vanilla extract in a small bowl.Gradually add the eggs to the butter mixture,beating all the time.Sift in the flour and baking powder and fold in gentle to mix,the add the milk and mix gently to combine.
  4. Separate the cake mixture into 2 bowl,fold in cocoa powder in one of the bowl. 
  5. Place the cake mixtures into the prepared tin by alternating spoonfuls of the vanilla batter with the chocolate batter,then with a skewer,gentle draw swirls though the cake mixture to 'marblise' it.Don't overmix..
  6. Bake it for 45min,Turm the cake out onto a wire rack and allow to cool...


Double Chocolate Cookies

Ingredients

  • 1 cup margarine, softened
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/3 cup unsweetened cocoa powder
  • 3 cups semisweet chocolate chips


Directions

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  2. In a medium bowl, cream together the margarine, white sugar and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Sift in the flour, baking soda, salt and cocoa powder; mix well. Stir in the chocolate chips. Roll tablespoonfuls of dough into balls and place them one inch apart onto the prepared cookie sheets.
  3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 2 minutes before removing to a wire rack to cool completely.

Cake POP.....

FROSTY THE SNOW MAN CAKE POP
I made these  FROSTY THE SNOW MAN CAKE POP  is for  last year Christmas Party . I think they are very pretty and cute. 
I'm using the chocolate candy wafers and marshmallow to do the Hat.
The noses are dried pineapple.
The mouths  and eyes are drawn on with a Shimmering write on gel.


Here  is basic instructions for cake pops:
1 box cake mix (cook as directed on box for 13 X 9 cake)
1 can frosting (16 oz.)any favor that u like i.e chocolate or cream cheese

1 pack of candy melt or chocolate wafers(any favor or color that u want)
METHOD:
After cake is cooked and cooled completely, crumble into large bowl.
Mix thoroughly with the can frosting. U can use the back of a large spoon, but it may be easier to use fingers to mix together. But, it will get  a bit messy.
you may not need the entire can of frosting, so start out by using 1/2 of  the can and add more if you need to.
You can start  to Roll mixture into quarter size balls(can u a spoon or ice cream scope to ensure the size of the ball) and place on wax paper covered cookie sheet or baking tray.
Melt chocolate in the microwave or double boiler.
Dip the tip of your lollipop stick in a little of the melted candy coating/chocolate wafers and insert into the cake balls. 
(insert not more that half)
Place them in the freezer for a little while to firm up.
Once firm, carefully insert the cake ball into the candy coating by holding the lollipop stick and rotating until covered.
Once covered remove and softly tap and rotate until the excess chocolate falls off. 
Don’t tap too hard or the cake ball will fall off, too.Place in a styrofoam block to dry....
keep chilled...served cool..


For the FROSTY THE SNOW MAN CAKE POP u need a bit more patient to do it..
Needed:
1 pack of chocolate wafers in medium size.
1 pack of white chocolate wafers or candy melt in white(i using white chocolate wafers)
some marshmallow,some dried pineapple and a stick of Shimmering write on gel
some cake pop(see above to do the cake pop)


Prepare the hats first.(candy melt or chocolate wafers the white one as a glue) 
Stick the chocolate wafer with the marshmallow together.After finish set aside.
Then for the nose part,cut the dried pineapple to small and long triangle .After finish set aside.
melted the white chocolate wafer ,
Dip the tip of your lollipop stick in a little of the melted candy coating/chocolate wafers and insert into the cake balls.
Once firm, carefully insert the cake ball into the candy coating by holding the lollipop stick and rotating until covered. Once covered remove and softly tap and rotate until the excess chocolate falls off. Don’t tap too hard or the cake ball will fall off, too.Before the chocolate coating hard,place the nose and hat in the right position..And Place in a styrofoam block to dry.Once dry, draw faces with with the shimmering write on gel and allow ink to dry!

DONE.......HOHOHO.....

CHOCOLATE SPONGE CAKE

Easy Chocolate Sponge Cake Recipe

8"  Round tin size (20CM)
4 eggs (separated) 
180 gm caster sugar
110 gm self raising flour 
60 gm butter (melted)
20 gm cocoa powder
60 ml water
1/4 tsp cream of tartar
1/4 tsp baking powder
1 tsp vanilla essence
a pinch of salt


Method:
Preheat oven to 170 degrees Celsius.
Sift flour,cocoa powder and baking powder.After that Leave aside.
Whisk egg whites with cream of tartar and salt until stiff peaks are formed. 
Add sugar and continue whisking until stiff peaks form again.
In a separate bowl, beat egg yolks with melted butter,water and vanilla essence. 
Fold into the egg whites and combine well.
Finally fold in the sifted dry ingredients and pour batter immediately into a cake tin lined with greaseproof paper or grease with oil/butter.
Bake the cake for approximately 30 – 40 minutes. 
Set a side and let it cool..DONE~~

Non-Bake Sweet Oat Peanut Butter Cookies

Ingredients;
½ cup (1 stick) butter
2 cups granulated sugar
½ cup milk
4 tablespoons cocoa powder
½ cup peanut butter
2 teaspoons vanilla extract
3 cups quick-cooking oats

Method;
In a large saucepan, combine 2  cups of sugar, 1/2  cup of butter, 1/2  cup of milk and 4 tablespoons cocoa powder.Bring it to a boil and let it boil  about 2 to  3 minutes. Then remove it from the heat.
*while waiting for the mixture to boil,grease the baking tray with butter*
Stir in the peanut butter and vanilla until smooth, then stir in the oats.
Pour the mixture onto the baking tray,use a spoon to smooth the surface..
Let cool until set.
Remove from the freezer,cut it into Square...and SERVE IT.....

NON-BAKE BLUEBERRY CHEESECAKE (EASY WAY)

RECIPE ON HOW TO MAKE BLUEBERRY CHEESECAKE WITHOUT BAKING IT :)
Crust:
1 1/2 cups graham cracker crum
1 tablespoon sugar
1/2 cup (approx. 100g) softened butter
1 teaspoon lemon juice and grated rind (optional)

Cheesecake filling:
500gm cream cheese
250gm sour cream 
1/2 tin of Comstock Blueberry pie filling
1 teaspoon vanilla extract 
1 teaspoon lemon juice (optional)
Topping:
1/2 can of Comstock Blueberry pie filling
To prepare crust:
Crush graham crackers, if you don't have store-bought crumbs. You can use a food processor or hand mixer or place the biscuits in pholythene bag(with zipper) and crush it with a rolling pin/bottel to make crumbs fast and easy.
Mix all dry ingredients and add butter to bind. Mash well.
*Crust mixture should be close to texture of moist sand; add a bit more butter if too dry.

Grease  a 20cm(8") cake tin with butter,pour the base mixture into the tin and press it flat and even. 
Store in the fridge,while you prepare the filling..
To prepare filling:
Using a mixer, gentle beat together the cream cheese,sour cream,vanilla extract and lemon juice untill smooth.Fold in 1/2 tin of the blueberry and mix well.
To assemble:
Bring out the cake tin from freezer and pour in the cheesecake filling. Spread evenly with spatula and tap the cake tin lightly to set and release some air bubbles.
Cover pan and chill for a few hours.
Top with blueberry pie filling or fruit before serving.

After 2 ~ 3 hour ........removed the cake tin....

Decorate with 1/2 tin of the blueberry and serve.......
